It  is  impossible to characterize Western India's food in simple terms since so diverse are its origins. Gujarat with its strong Jain traditions is exclusively vegetarian. The typical Thali (Vegetarian) meal is a mouthwatering carnival of savory vegetables prepared with aromatic spices, accompanied by crispy fried snacks.

Mumbai can cater for every whim but where better to try Bombay duck - the dried Bummalo fish. Goa too has memorable seafood - Squid, Sardines, Oysters, Lobster and Tiger prawns often adapted from original Portuguese recipes, and meat dishes - Pork Sorpotel, and Chicken as well as Mutton shakuti - enhanced by the use of vinegar. Goa is also known for its Pork and Beef Vindaloo.
