The standardization of culinary traditions was set by the French from the very ancient periods. It was by them the art of systematic cookery and variety of recipes was developed. Essentially the word 'cuisine' too has the French origin.


There  is  a  wide   array  of   dishes to garnish the dining of a visitor in Singapore. Being a multi-racial assemblage of delicacies, the Singapore cuisine holds in its list the Chinese, Indian, Malaysian, and the Nonya or Pernakan food. Out of the fold Singapore has other Asian and western food. The latest entrant to Singaporean food is the New Asia - Singapore Cuisine and the herbal food reflects the Chinese approach to health.

As one goes southwards the culinary culture varies and the food becomes more spicy. The food in Kerala tastes something out of the world. A feast in Kerala is called Sadya which is often an elaborate vegetarian meal often served in plantain leaves.

Indian cuisine may not only differ from place to place but household to household. But here too the theme of unity in diversity is well applicable; Indian cuisine can be commonly briefed as Rice and Curry. But the curry may have more than 500 variations across the country. The Indian food is always hot and spicy. The commonly used spices include chilli, turmeric, garlic, ginger, coriander leaves and seeds, cardamom, cinnamon, clove, pepper etc. Indian culinary tradition has its roots to the royal courts of Mughals. The Mughlai food is common in Delhi, Hyderabad and Lucknow. The 24-course banquet, Wazwan is famous in Kashmir. Seafood and coconut based food are very prevalent in Goa, Kerala and West Bengal.

In India there are innumerable restaurants which serve Continental, Chinese and Western cuisine. Specialty cuisine such as Thai, Spanish, French, South Asian, Mediterranean etc. are catching up fairly well in the metros.

Mauritius has gained the 'Cordon Blue' for the good food that is provided in hotels and restaurants. Hotels in Mauritius procures innovative styles from all over the world. There is a diverse selection of Local (Creole), Indian, European, Japanese and Chinese cuisines in Mauritius. Exotic Indian fares are also available at various restaurants all over the state. Dining Mauritius can be either in A la Carte or Buffet style. Along with numerous non-vegetarian fares a wide array of vegetarian courses are also catered at the restaurants in the country. Some specialty restaurants like Indra at Domaine Les Pailles, Carri Poule at Port Louis, Kela Patta at Caudann Waterfront, Port Louis, Nirvana At Perybere provide Indian cuisines.
